One Piece Chapter 998: "Ancient Species" (Official Release)

out of curiosity. Are we sure Marco used healing flames particularly? It seems that he can distinguish what his flames do to some extent to me at least as all of his flames don't heal (like the ones that hurt Prometheus didn't seem to be healing flames.) and they only mention these ones as warming up the body no one mentions feeling refreshed or healed or anything. It also doesn't make sense for marco to use a wide range move that heals the enemy team in addition.
You're right there isn't much evidence of Marco using his flames to heal people, and it seems rather it just draws out the person's own body heat to fight against it. Those who were effected had Marco's flame attached to them and Apoo doesn't.

Meaning it's just a stamina feat that Apoo got back up.

Marco says that the virus is drawing out their body heat and people are turning into ice demons when they run out of stamina. His flames are able to "defrost" people who were turning into ice demons so he could have been boosting everyone's stamina

Jinbe and Luffy assuming that Sanji detected a high level of power and went to intercept it despite this clearly being false since we know he simply heard the cry of a woman.
It is true that he didn't detect a high-level enemy but it does not mean it wasn't his Observation, Sanji does not have supernatural audition, and it was pretty clear back in 996 that he was the only one able to "hear" it, so it means his Sensory Kenbushoku is better as you said (it makes sense since he is the one who focused in that during the TS training).

It was explained in skypiea that observation haki was the ability to hear, so maybe Sanji really does have better observation than Luffy.

I do not disagree with the idea that Sanji's sensory powers could surpass Luffy's. I do however disagree with using a clearly false statement to justify this as a "fact".

Sensory Kenbushoku is all about range, no? Or is there something else like precision? If there is nothing else, Sanji would already have a better one for being the only one able to "hear" the randoms. I think his haki is increased when it is women-related tho, he sensed Caribou "at the same time" as Luffy.

It is a possibility that Luffy overheard the same conversation as Sanji, but as he is not a pervert he just ignored it. Jinbe's speech is an alternative situation, if it really happened as he described, Sanji could really have a haki superior to Luffy (Which is not the case since Sanji did not feel a powerful enemy).

Apoo seems perfectly fine after receiving a Shishi-sonson in the face, he was even able to jump great distances and return to the battlefield, which indicates that Zoro hasn't even seriously injured him even catching him in a favorable situation. Lol.

Sanji asks them both if they can hear it from the third floor, they respond "hear what?" And based on Luffy's comment it probably implies he couldn't hear it.

Perfectly fine isn't someone and struggling for breathe, he was also knocked out last chapter indicated by Drake's reaction In 997 and the fact only now did he get up off the ground several pages later.

A significant amount of time has passed between Zoro slashing Apoo and him coming back, he's huffing badly and clearly struggling to get back up. Going by how we've treated literally every other similar clash in recent chapters (Sanji vs King, Ulti vs Usopp, Yamato vs Ulti etc.) it's clearly a stamina feat on Apoo's part
