Vegeta may have Ultra Ego, and Erasure attacks, but Sanji has future sight, and can easily avoid Vegeta, then hit him multiple times in an instant in the middle of his attack.

Uhhh... Vegeta is eons above Goku when he was an adolescent, who could easily outskill the greatest martial artists in the world who has over 300 years of experience, same applies to King Piccolo and Kami. His performance vs Broly is nothing short of outstanding, although I am unsure if I can use this.

They both have flight.

VERY limited flight with Geppo vs a consistent, full 360° flight from a DB character. Vegeta absolutely has the advantage in mobility.

Sanji has amps with Diable Jambe, Ifrit Jambe, Armament haki.

Most of which would be overpowered by Ultra Ego's ridiculous RPL, and the fact he gets stronger the more damage he takes.

Sanji can read all of Vegeta's moves with his vastly superior senses, and hit him with durability negation attacks.

AoE Attacks.

Sanji is also a very smart fighter. He was able to figure out how to counterattack Big Mom's ship, and he was able to outsmart Capone Bege.

Sanji usually comes up with plans on the spot. Here, here, here, here, and many more.

This is like, not even first arc dragon ball skill feats. Stop. Literal wank.

Based on this I'm assuming Vegeta can't just instantly erase Sanji, but if he can or has shown to create a hakai aura that erases Sanji on impact like @FluffyCreatureZ is saying then he stomps.

Vegeta hasn't been downgraded to SSBE, he's getting his EE restricted. That doesn't really counter his better range, AoE attacks, better mobility in the air, and ridiculous RPL+Stronger the more damage he takes.

Don't get me wrong, Sanji would put up a fight, but not only does his speedblitz cost some significant stamina (according to Queen), but he would be eventually overwhelmed by Vegeta's hax.

It's not "VERY" limited. It's flight. He has fought people using Geppo in the series. Vegeta may have the advantage, but it's not large enough for it to matter.

You can because it's canon, but Sanji vs Jabra was way more impressive than Vegeta vs Broly. Broly was a brute with little to no martial arts experience, while Jabra was trained as a child in an elite group of Government assassins, and Sanji dispatched

Sanji's amps and Observation Haki should give him a comfortable victory. Even if you were to somehow convince me that Vegeta is more skilled than Sanji, it won't matter, as Sanji can literally see in the future, and sense Vegeta's intents and how and where he will attack.

Queen said that, but Sanji continued to blitz Queen even longer than he expected. Queen knew literally nothing about Sanji's speed. Queen got speed blitzed and 9 shot. It was an easy win once Sanji used Ifrit.

durability negation and Vegeta will still remain damaged even if he physically gets stronger

plus his regen & resistance to blunt force trauma would keep him in the fight even with Vegeta being physically superior; since Dragon ball characters resort to punches and kicks quite often.

Speed and strength are tied together in dragonball, the more damage Vegeta sustains, the more powerful he gets overall

I know it bypasses durability, but Vegeta is resistant to heat. So how is that going to be fatal to Vegeta? UE basically ignores the damage given to him and turns it into raw power and speed. Yes he will be damaged, but it won't be enough to finish him in a few shots.

I would not replace Vegeta so a different key would be fine if out of 18 list of participants at least half get's one shotted by broken hax.

As for skill, vegeta completely skill stomps no competition even ignoring pretty much all his advantages. He scales to Goku's skill feats which look like this summarized.

Average, Combat Genius (Goku isn't bright academically but he is a genius when it comes to anything combat related. He was trained by master martial artist such as Son Gohan, Muten Roshi, Kaio, and even Whis. When he was a kid, he was capable of copying techniques even master martial artist found difficult to learn most of the time by seeing them only once, such as when learned the kamehameha after seeing it once, a feat which took roshi, the best martial artist in the world, 50 years. He is able to figure out the flaws of the SSJ forms and deduce that SSJ G1 is the best SSJ grade and mastered it. He can learn but also improve techniques sometimes mid fight to suit the situation he's in for example when he copied roshi's afterimage bluff and improved it to beat roshi with his own technique or when he used the kamehameha to boost himself mid air or even with his feet. He was so skilled that he matched cell in combat and the latter even praised him for his ability despite the fact that Cell is a combination of him as well as many other strong fighters on his level and knows all of their abilities and techniques including their weaknesses. He was praised by Beerus as a genius for being so experienced so as to use ultra Instinct unconsciously, and he mastered ultra instinct in less than 48 minutes, a feat that destroyers, who live for hundreds of millions of years, cannot easily perform. He's able to read an opponents intentions and predict the movements of Hit, who has 1000 years of assassination experience, during time stop. He can fight opponents much faster and stronger than him such as Granolah or Gas and keep up with them, the former being able to one shot him, via sheer skill. He was able to create such minute movements so as to avoid Granolah's pressure point attacks from hitting his vitals which could defeat him in one attack since he couldn't dodge them completely)
