His other opponents are Toad, Bowser Junior, Pearl and ******* Sans, so Goombario is pretty much the only option

People are a bit mixed of who Niijima should fight as it's either Tifa or Medaka.
Honestly, either one is good but I would probably choose Tifa.

Scrolling through the TVTropes page on suggested matchups. Highlights include:
Senator Armstrong vs Dian (Metal Gear vs Jewelpets):
These two Big Bads fight to purge the weak so the strong can survive and make their respective worlds great again. Both have played ball-related sports [football and basketball respectively]. Both own giant fire-belching rides weaker than themselves. Both are fistfighters with superhuman strength. Both turn black with red eyes. Both are so tough that only specific weapons [Jetstream Sam's sword and combined Jewelpet magic fired out of Rinko's Jewel Stick respectively] can do any lasting damage to them. Both can light their fists on fire to create fiery eruptions and throw fireballs respectively. And to top it all off, both were defeated by a hero with white hair and glowing red eyes [Raiden and Ruby respectively].
(As an aside, I was surprised at the sheer number of Jewelpet matchups)
Human Torch vs Cinder (MARVEL vs Killer Instinct):
Hot-headed young men who have pyrokinetic powers and got them through scientific origins [cosmic radiation and genetic experimenting]. They also did questionable deeds for the thrill of it and are members of well-known organizations [the Fantastic Four and Ultratech], where they endlessly annoy others with their remarks.
Captain Qwark vs Zapp Brannigan (Ratchet & Clank vs Futurama):
Incompetent space heroes with big egos who're well known for being proud of their bodies, as well as having their moments of being a Jerkass.
