Sanji might have the speed advantage with his amps, and he can also burn Vergo.
Sanji is pretty straightforward in this key but I'll vote for him.
 
I looked at Vergo's page and remembered he has Tekkai and Armament
Though Jabra also had those and still got clapped by Diable Jambe, so that's not really a factor here.
Maybe his Explosion Manip can be useful here?

Does this Sanji remember his brief fight with Vergo by SBA?

This Sanji is a Early Whole Cake Sanji who would be a bit faster and stronger than the Punk hazard one?

Just making the point the current justification on Vergo's profile suggests his Tekkai scales to Sanji's Diable Jambe, not that it's actually accurate to scale him to that level.
 
It seems though it's a matter of who can break through the other's defenses first, as it's Sanji's higher AP vs Vergo's defense and techniques.

Kind of like King vs Yamato.

Didn't think exchange with these versions happen in canon and Vergo's leg almost broke Sanji's?
 
First of all, Vergo is not going to crack Sanji's legs that easily ( hell I doubt he could do it at all ).
His fight with Sanji was after Sanji already got roughed up when Nami was in his body, so I don't know why Vergo's justification for his AP is "cracking Sanji's Fibula" when it was clearly shown that he was already damaged before that fight. Plus he barely cracked it anyway despite it already being damaged.
Second of all, "Tekkai and Armament tanks his attacks and shatters his bones" my ass, because not even Jabra's Tekkai could help much against it.
Third, don't forget that Sanji also has Armament and can use combo attacks. Vergo might be able to take one Diable Jambe kick, but is he gonna tank a barrage of them?

Vergo isn't Jabra. Vergo withstood a DJ kick with Tekkai.

Sanji's "armament" at that point in time was always invisible. Shit he probably used it on Vergo at that moment.
All because it's a barrage doesn't mean that he's gonna go and get shat on, especially when Vergo's haki is dozens of times stronger than his.

His armament is dogshit so please cut that out.

Vergo is tanking that shit with ease if not dodging it.

With Vergo's buso he's able to resist the blunt force & heat of Sanji's diable jambe. Add Tekkai on top of that and he's easily taking those strikes.

You're claiming that because of one moment, Sanji is not capable of winning. That is not true as we saw that during their fight even after Sanji cracked his fibula, he was still having the upper hand in their fight.

I'm not even gonna bother actively clicking the reply button for the other comments.
First of all, what the **** is "Invisible Armament"? Is this the new excuse people have for a character failing to match another? This is like saying Shiryu was actually the one hurting King during his fight with Zoro and Zoro actually never even dented him, because of the fact that Shiryu is invisible and can technically be anywhere without our knowledge. It's really stupid. They're either using Armament or they're not, and if we can't see black coating, Emission, etc then it's not Armament. Simple.
Second, Soru is not a massive speed amp, and we've seen people keep up with Soru users multiple times. Sanji has done it him self.
Third, HE DID NOT RESIST OR TANK HIS ATTACKS.
He's literally shown bleeding a bit and getting sent into a wall while holding his head, by a normal DJ attack, despite using Tekkai ( which he did use, because Sanji even noted that he's like a mass of iron ).
So let me ask again... What wincons does Vergo have?
 
And also, cut the shit with the "Oh Vergo has better Haki because he coated his whole body in it" because Law could still dismantle him despite that, and we haven't seen Law use Fullbody Haki.
Edit: And Smoker could still match Vergo for a bit, as well.
