Should Harry not scale from Voldermort due to overpowering him in the final movie?, Wouldn't this make Harry High 8-C or 8-B

The Elder Wand rejected Tom and it would not allow him to kill Harry (who was its rightful owner at that point). The killing curse which Tom fired off at Harry rebounded and killed Tom. Harry thus does not scale to Tom.

^That.

Furthermore, Priori Incantatem (read: the magic clash that happens between Harry and Voldy all the time) is pretty clearly depicted as being a battle of willpower, not magical power. So even in the best-case scenario, Harry overpowering Voldemort in this sort of clash would have nothing to do with his raw AP with magic.

^ True.

Tom's raw magic power in any case is vastly superior to that of any wizard barring the likes Gandalf Dumbledore and Grindelwald. Nobody else would scale.

Also, the books are the primary canon in this verse. The movies don't go into as much detail in the duels as do the books. Snape vs McGonagall is a perfect example. Man I wish the movie portrayed that duel as it was in the book.

They really did cut out a lot of good stuff, I agree. I'd probably derail this thread all the way into an abyss if I allowed myself to go on about what could have been, but...yeah.

In any case, the only person who directly scales to Voldemort is Dumbledore. Grindelwald only really scales to the latter, and the story goes out of its way to show those three being hilariously above every other named wizard in the series.

So should I close this since we are unlikely to change Harry's stats and the thread is unlikely to go anywhere?

I don't have any authority on what threads get closed, but I'd say yeah. The initial point's been debunked, and there's literally no other evidence in the series that would put Harry beyond where he already is.
