Its the difference between the cutting power of the sword and Satsuki's physical strength driving it. Even as its embedded in Senketsu you see that it keeps moving
When did he deflect it? If he deflected the edge of the sword that would be a big outlier

Basically Satsuki was able to cut Senketsu but he hardened around the blade and it got stuck in him so she couldnt properly swing it any more
