My personal guess about sephiroth's bosses:

1) Bizarro Seph

2) Safer Sephiroth

3) Mental fight with Human Seph

4) Ascended Seph (something close to his AC portrayal)

I think 4) will be a superboss fight.

Only critisism of the gameplay of FFVII Remake is that I don't like how Magic is also tied to the ATB Gauge and uses up a bar just to cast a spell. I think it should have been it's own thing and just cost MP.

I guess that prevents abusing magic.? Like killing enemies quickly by using high end spells repeatedly from far away, makes healing more scarce so you can't just take a bullheaded approach towards foes, or just have the entire party fall back.

I get the hunch that later on there will be ways to increase the amount of ATB bars so you can use more commands.

I guess that XVI is out of the picture until VII is finished?

I would hope so. I'd rather they work on one game at a time.

Although since the remake is basically done, I would be surprised if they haven't at least started with the early development stages with the next FF game.
