Good question honestly but not an easy one to answer, trying to think of good matches for any individual Link is tough.

Yes. Not so much that the reader knows who is going to win but still enough so that the power system makes sense and there are proper stakes. Some of the best stories are about a weaker character valiantly fighting a stronger foe. Thanos was compelling and threatening as a villian in Infinity War because nobody sans Stormbreaker Thor could match him for very long. A story understanding the power difference and using that to tell a story is in of itself power scaling.

  • Eren I've already gone on record about
  • Lif has the whole 'alter ego who destroyed a city in search of a singular, self-destructive desire' thing going on.
  • Nanashi has split routes and Akira as a previous life. Ask @JoshDoshMosh for more details on that, though.
  • Roxas is N's character arc sort of in reverse. While Roxas made friends within Organisation XIII, and then abandoned them, N started out as city folk, and then became Moebius every time he and Mio died.
  • Homura should be obvious from a glance.
  • Neo has the whole 'revenge for a loved one' down pat, and recently ended her arc realising that she needed some time to find herself inside the Ever After. Depends what the RWBY upgrades end up looking like.
