Yknow I gave it some thought
But i'm pretty sure Superman would still beat Goku with the stats they have out. Even if they give goku strength, hulk vs broly and beerus vs galaxia both showed that they don't scale speed to the saiyan multipliers. So, Superman would scale to the quintillions of times FTL feats of Lex and Diana, and would be fast enough to do anything from dura-neg lobotomizing him to doing what he did to the world forger and amping himself to 2-A via rapid sundipping.

I think they just find it easier and more consistent to downscale speed from Whis since he's the strongest being in U7 until stated otherwise.

Speed wise: we know Thor has the advantage
AP: if we assume DB give Thor access to the Odin Force he could scale to the Low Multiversal feats that could put him over Vegeta even with Multipliers or at worse even with them
Versatility: Vegeta has spirit Fission and Hakai now while Thor has God Blast,Energy Drain and other Abilities to keep him in the game

Returning to an earlier, if Saber vs Erza does happen this season, Saber has a practically impenetrable defense with Instinct and Avalon, but also can't really damage Erza since she's way stronger. However, she might be able to get the win if they scale her Excalibur to her prototype self, which is fairly reasonable I'd say. Assuming her sword has the same seals as her male and lancer counterparts, they'd be as follows:
In a theoretical 1v1 fight between Artoria and Erza, the 1st, 2nd, 3rd, 5th, 7th and 9th seals being removed is pretty likely given what I know about both characters, meaning Excalibur could theoretically one shot. However, Erza's far higher speed really puts a dent in the entire argument, since she could probably just blitz Artoria before her Instinct can let her react.

Servants are going to end up as Relativistic+ with potentially FTL reactions. Also there's a revision thread currently up discussing a bunch of tier 6 feats. Servants will probably end up at anywhere from 6-C to High 6-A.
There's also the matter of if they'll limit artoria to Just her Saber key or take things like Lancer into acount.
