Transmutation is a typical Devil Fruit ability (sugar DF) and Haki can resist or nullify the abilities granted by them. Therefore, Haki can be used to resist or nullify transmutation.Law would just use Kenbun to predict this, and then blitz her.
If for some reason he doesn't do this, he could just use Buso to reverse the effects.
