For his weakness "Merciful on damaged enemies, secretly wants to be killed by a worthy opponent (gives Seras the weapon she needs to kill him)," that was part of the Major's plan for Alucard in the story. The Captain's only weakness is silver as demonstrated when Bernadott had stab him with a silver tooth killing him.

Mercury can not compete against these two especially since characters from RWBY have been shown struggling to fight for long periods of time when they are fighting people of a similar level of ability. He would most likely have a broken leg (*memories of recent episode* HAH ) after a good 30 seconds in a 3-way with these two. He does not even meet these two's abilities and speed.

This would primarily be Sanji vs The Captain.

Sanji during Enies Lobby is relatively equal in terms of physical force as The Captain, but a fight is not decided by physical feats.

When it comes to combative exerience and execution, The Captain is FAR superior. Sanji is not like Zoro or Luffy. He does not have the mind-set of a fighter. He has made very arrogant moves and that cost him. He never learns from his mistakes. The Captain waits and applies the environment and his tools to kill his opponent.

The Captain wins against Sanji and Mercury with relative high difficulty overall 10/10 outcomes in my mind.
