Shouldn't the characters in Mario Kart have Vehicular Mastery?

Mario has no canon, so...

Everyone in the series has defined character traits. For Princess Peach to be racing alongside Bowser throws everything on its head, and even games like Mario Party have some sort of story to them which has similar plots to main series games.

@Bob Composite Link only uses Links in the Zelda games, so it wouldn't count even for him

@Stalker All the Sonic characters that are playable in TSR already have Vehicular Mastery.

As for Mario Kart not being canon? Ot references odler games like Sunshine and in Sunshine, there's a feed of Mario Kart when F.L.U.D.D. analyses/scans Mario.

So yeah, it's definitely part of the canon. Mario Kart also gives characters the ability to survive being crushed flat by a Thwomp as a well as Mario Partt, which results in Mid regem for every character in those series.

I forgot to mention this but Miyamoto said in an interview that Mario doesn't really have a canon by comparing the characters to actors who play whatever role the game wants them to play (he said this in response to a question why does Mario let Bowser race with them in Mario Kart).

He thinks of them like how Popeye or Loony Toons are treated canon wise.
