EVA-01 has abilities from all versions.

Perfect susanoo, etc are all available.

Is Madara even capable of destroying at A.T. field, and can 01 do anything about Edo Tensei? (Since there is soul manip)

What's even Shinji's speed? He scales to Adam (Evangelion), who scales Israfel, who isn't even Massively Hypersonic.

Yes, both High 6-A. iirc, EVA-01 is (during EoE) effectively god for a brief time, scaling higher than Adam or Lilith since it has the fruits of knowledge and life, but there's no speed feats shown. Outside of that I think it's MH+. Outside of speed though, I'm not sure how the A.T. field interacts with a reanimation.

If speed is unequal i think Madara blitzes, otherwise Shinji uses the anti AT field and soul haxes.

Yeah, if speed equal, then Shinji wins. But since it isn't equal, I'm sure Madara wins due to being way too fast for Shinji.
