No one considers Tats vs Psykorochi to be more relevant than Boros vs Saitama.
1- Saitama is the main character and Tats is not even a top 5.
2- Boros' fight concludes the first big saga of the series. The second saga is concluded by Garou vs Saitama. They are important milestones.
3- Scaling wise the Boros fight is absurdly bigger.
4- Narrative wise Boros' fight has much more meaning to Saitama's character.
5- Much more people know about Boros vs Saitama than Tats vs Psykorochi
6- Murata and ONE have explicit statements that the Boros fight means something important to them.
7- first villain who survives a punch from Saitama, a refreshing shocking element for the climax of a season.
You weren't here on this wiki before the Tats fight, and the manga was already very popular. Even so, popularity doesn't make for a good fight.

boros vs saitama is only popular due the anime
if tatsumaki vs psykorochi gets the same treatment it can easily outshine it. Just this debunks 50% of the things you said.

Do you guys think Genos vs Mad Cyborg will be an epic, serious fight or an anticlimatic one-shot to draw a parallel between Genos's growth through the series and Saitama?
In a way, i feel like the latter is more likely, since mad cyborg's only real feat was destroying a town (wich is high demon at best) (besides the actual organization/person who built him will likely be the actual threat.)
But at the same time i'd feel bad if he just accomplished the goal of his existence and it turned what he was chasing all this time was just some random fodder who died instantly.

I think Zhoniin once made a huge theory about how God is split into his fundamentals parts such as body, mind, soul and each of them got sealed in a different place. There is some evidence for this theory but I can't remember
