LS can also be used to restrain characters for incap, and is actually pretty useful for people who use grappling

Not without a high enough AP. There's a limit to this.
A Class G character who is 8-B, cannot physically rip apart a Class 100 character who is High 6-C. To actually damage the body he needs to be unleashing enough power to overcome his durability. Lifting Strength does not ignore physical durability. He'd be able keep him restraining and put him into any shape he wants.
But at some point they won't be able to move the other anymore, since now they'll need to overcome their durability to move/stretch the body enough to cause damage.

AP is irrelevant here since that’s just striking strength, dura is what matters
if you can lift that much and have the dura to lift that much, then you can do it

AP isn't striking strength, AP is just attacking power in general. Any method of attack counts for AP. Striking Strength and AP are separate for a reason.
Just that for people who have no method of attacking beyond physical strikes, AP and Striking Strength is the same.
Also you can't scale weight to joules. You need more than that to find joules, which is needed for durability.
