So should their profiles be updated, granting them resistant to soul damage since their souls is as strong as their physical body? (Undertale has it due to the soul as strong as the physical body)

The only thing that really bypasses physical in Dragon Ball is magic, energy-based abilities are pretty much all bypassed by a higher ki.

that only counts for a few, not all abilities can countered by having a higher ki, actually saying the characters resists soul manipulation with higher ki sounds like a stretch

What i mean is that a character's weak skills don't have much effect against a character who has superior attributes, ( i'm not saying that DB characters are immune to soul manipulation )
Also, ki is the soul of the characters, they would have soul resistance through ki merit, but that's a topic for another crt.

That is the equivalent of saying that a character who has chakra will have resistance to soul manipulation, because the chakra combines physical and spiritual energy, even though it does not give you resistance to soul manipulation.

Kinda curious as to why dimension of swirling lights isn’t considered 5-D, I read a post that details the entire dimension was intentionally made to look ethereal and alien because they were trying to model a higher dimensional space, and Gogeta/Broly seemingly destroyed it to get back to their universe.

No, but characters with enough strenght can overpower soul sucking abilities such as the reaper death seal and Human path soul-sucking justsu (ie KCM Mode Naruto and Orochimaru). Shown in Naruto, can you imagine an Otsutuski not overpowering Nagato's soul stuff? no, so there you have the answer.
