She can win with her regular attacks, spatial and soul stuff, or her Mortal Sword, which I'd hardly say is avoidable by him.

His AP can't harm her dura, and he can't suck her, I pointed that out above. He'll need his haxes, that all seem to have poor range and can't really compete with hers

Well, if a direct attack can hurt him, then that's good enough, it helps her a lot. If we're talking resistance to space attacks, even Royal Nobles have it, as they can survive punches that shatter space. Then you got Enlightened Beings, Ancient Saints, Heavenly Sovereigns and Heavenly Kings, all of whom can resist and dish out space breaking stuff. Say, a Royal Noble who can resist it wouldn't survive an Ancient Saint doing so, so a "baseline" resistance might not be enough, although comparing it around different franchises is more difficult.

This is just stubbornness at this point. The profile points out clear interstellar resistance to the power, anyone hoping to do anything to him needs the potency of their hax above what he has, the profile doesn't say that any space attacks can harm him, that's stupid, the space attacks that can harm him scale to the potency to the biggest space manip he took (and AP going on there too). None of the sh*t you point out there matters as none of there is in the same level. Being above 1 doesn't matter if you want to exceed 100000000, being above people who in turn is above 1 doesn't matter either.

Anyhow, with it actually harming him, she can branch out to, say, aiming for his soul to destroy it, something she surely can do since she killed a crapton of people who all have Low-Godly regen and could have ran away with their souls otherwise. Just piercing the body to reach the soul should be enough.

It doesn't harm him for the same reasons repeated to you over and over again. Kirby's soul can't even be destroyed by other Kirbys. Unless you want to erroneously equalize factors here too her feats of harming souls weaker than Kirby's doesn't matter.

Large AoE would help with hitting someone as fast as him, she can cover the horizon without a problem, although I guess it depends on how much faster he can become with items, or if he'd choose to evade rather than block.

Distance is not above speed, it doesn't matter if "she can cover the horizon without a problem" when Kirby can dodge what she covers without a problem as well+having the distance to know when stuff is coming. Evade and block are limited, Kirby can overpower to keep approaching her and hit her attacks to send them back to her, although they would get annihilated if he does that.

Mortal Sword summons a giant shadow of an Immortal Emperor, that strikes with it, slashing through laws and all magics and overpowering 3-Bs. Probably some power-null through suppression as well.

Is the Emperor sentient? If so then Kirby can use a riend Heart with him. Even then, the attacks seems to take some time and be dodgeable.

For him being able to dodge stuff well, again, I don't think it's the same as evading something that she can morph to the size of a mountain, continent or planet. Attacks covering ridiculous areas are the bread and butter of her verse.

It is tho. What's fancy about it is the distance, Kirby can travel the distance to dodge that, speed is = so there isn't much more to it than that. Also Kirby has fought a planet and dodge many interstellar omnidirectional waves (the link above on Return to Dream Land shows that 15 times+other character of even speed doing the same).

Wouldn't optional equipment just give him the stuff he could have at the same time? Will he start buried under a mountain of items or what.

No character is meant to have a point in their lifes with all their optional equipment, it's just a recompilation of what they had, and you don't see anyone saying what OP one has in thread or not, they just have all of it in the same bullsh*t way composite characters dare to exist.
