TBH Sans Danmaku is kind of overrated, I'd say Kirby is more than able to evade it
If anything, I think the only problem Kirby might have is bones surging from the ground

Man, you kinda overstamate Sans Danmaku. Like, his Danmaku is very impressive in his first attack and last. The rest of his attacks are pretty normal. The problem are they speed, and the blue soul mode being kinda clunky to control;

Kirby has superior LS, resistance to Time Stop, Gravity Manipulation, Soul Manipulation, and Telekinesis, so Blue Mode might not even work on him
Sans best shot is to drain his life through Karma (which isn't impossible considering Kirby would have 20 HP), while Kirby can just befriend him, Inhale him, or just one-shot him with Shockwaves

I guess because Sans soul attacks wouldn't affect Kirby because Ghost Kirby has layered intangibility?

It is stated that Ghost Kirby is a soul, and it does have layered intangibility, so Kirb has the advantage there, but Ghost Kirby straight up has zero health due to it being a form accessed when Kirby's health reaches zero. Although since Sans is attacking the soul directly, I'm not sure if Ghost Kirby would have a health bar in that case.

- Attack, Double Attack & Tackle: A slap (or slaps), charged slaps and a tackle forward respectively. Managing to land any attack against living opponents will result in Kirby's body being quickly recreated, though he would be with low "health". Although this presumably works by way of absorbing some of the health/life of a target (hence it needs to be hit) the process can technically be done through having an item hitting the target or firing energy at them, meaning that physical contact isn't necessary.
Although Kirby AP is so much higher thatn Sans AP that Kirby likely oneshots Sans anyways.

How does he even beat Kirby then? If he reaches Zero health he will just go to the ghost form and if Sans attacks he will revive (Assuming his soul attacks even hits)

Sans attacks Ghost form directly, bypassing Kirby's Health Bar I think? Also if Kirby attacks, he will Revive, not Sans.

Not really, compared to other non-Kirby 2-Cs, Kirby and his verse is one of the weakest and least haxxed.
Of course, sans is not 2-C so....
anyways I think this is a stomp, but I'll wait for other members to comment as I know nothing about Undertale
