Where is evidence to support that he can defeat Infinite Zamasu?

The reason why Vegito is at 3-A and Goku (with SSB/UI) is at Low 2-C is simple. The Vegito that we've archived on here is from the Future Trunks Saga, not a hypothetical "Current/Broly/Moro" Arc Vegito.
We don't write down what tier they are based on baseless predictions or What-Ifs (unless it has an actual storyline), we do it from the last time we've seen the character around.
Both Goku and Vegeta have became a lot stronger since the Trunks Arc, so it's unsurprising that both of them right now are stronger than Vegito from the Trunks Arc. Otherwise, Vegito would be like this.
TL;DR - Vegito's statistics is from the Trunks Arc, Goku's statistics are from up until the Broly Movie. So Goku is stronger than that Vegito.
