It's simple.
Age has to do with the length of time that something has existed. Because Ultimate Madoka, Akuma Homura, and UKG exist simultaneously across the past, present, and future, you can't go back into a point in time where they didn't exist nor would you see an older version of them in the future. It's all the same being regardless of what point in time you're in, thus their age cannot be determined.
