What's stopping the Avengers from just blitzing and one shotting the Justice League?

The strongest members of the Avengers are Relativistic+ and At least Country level while the strongest JL member is just At least Relativistic and High 6-C. The JL can do nothing to even harm the strongest Avengers members.

And with one week of prep, Iron Man could potentially just start creating multiple Iron Man suits as strong as say, the Hulkbuster to help fight and overwhelm the Justice League.

No, Superman has an AP of 152.7 Gigatons while Thor and Hulk have an AP of 39,567 Gigatons, that's almost a 260× difference

Superman was literally capable of shifting tectonic plates. I doubt his AP caps off at just 150 gigatons

The feat has no timeframe so it cannot be calculated properly for AP, that's why he only has a "possibly Class Z" in LS
