Considering the nature of gems and how her "physiology" works, most likely only works on gems.

Technically yes, though it's never outright stated to only work on gems. So it's kinda yes and kinda no really.

Weekly, he is the one that wants to talk about. Honestly I think is not possible, this is not, for example, a variation of Life Force Energy (like Chakra or Ki) or Supernatural Forces, the're simply another type of being whose physiology (and thus few of their powers) differ from human's.

I think it's just that, like obviously SU was not made for a bunch of people on the internet to debate whether or not they could beat other fictional characters in fights, and as a result, it suffers from the fact that, the creators don't need to make all of their abilities really work on anything else for the sake of the story. And that kinda puts SU at a disadvantage in a fight when a lot of their tech/powers might not work when it should just for fairness's sake. It's not even like the abilities in SU are even super haxxy, White's powers being the haxxiest I'm pretty sure. So, I think it's just in the interest of fairness to the verse more than anything. Plus, that reason is kinda a subversion to the rule against adding matches with restricted powers, since they're just restricted by default.
But anyway, back to the actual question I do actually think it's possible that White's mindhax work on organics, we just never see her do it. Organic mindhax DO exist in SU, with things like the Harmony Core, so it's definitely possible. nyway, I think we've answered the question that technically we've only seen it work on gems but it COULD work on organics, so we could honestly close this.
But anyway, back to the actual question I do actually think it's possible that White's mindhax work on organics, we just never see her do it.
