If fragmenting rock truly only requires 8 joules per cubic centimeter, why can't I destroy things like dice and similar hard small objects by punching them?

Assuming my fist + end of my arm weighs 500 grams and I can throw hands at 6 m/s, that's 9 joules of energy that's doing diddly squat.
 
Yeah, IRL surface area plays a big factor on how much you can impart your energy onto an object, that and IRL energy usually spreads out far and wide.

That's why piercing damage is also a thing, like bullets causing considerably more damage than a body tackle of similar energy yield because the bullet's tiny impact area can efficiently transfer all that damage into that one point. That and what thelastmlg said, our arms are flesh and soft so they absorb some of the impact too. A bullet tho? It's one solid piece of metal.
