I'll go with Jin since looking at the calc for Gil he's only got that as flight speed not actual reaction speed

I don't think it's just flight speed. Apprently, Gil smashes through the Moon Cell, burning 90% of his treasury, and saves the protagonist from deletion in his ending, implying that he was shooting and flying at the same time.
As a result, I vote Gil due to a MASSIVE speed advantage.

Really? From the video linked in the calc the servant appears to just fly/ warp space and com back without any attack, but I haven't seen Gil's route so I'll just take your word for it and vote for Gil

Well, Gil actualy can't fight with such speed with Ea for example. But he can move with such speeds (and should have the even better reactions) and it looks like GoB is moving with him while barraging enemies...

I'm not really taking anything at face value until I see the evidence that it's not just flight speed. Until then, Jin takes it with Gourd and RJB.

In-character? Jin absorbs all incoming weapons (including Enkidu) with the Gourd, then proceeds to extend Youei and implale Gil, then expands it, ripping him in half.

If we are using the Sage Realm arc Jin, they are both large planet level. Though in that case I would restrict EA thanks to its "higher" rating
