Feed Me Your Wretched Anime Suggestions

Sort of necroing I think but I've been reading Dungeon Meshi and it's very good, so I'd support the recommendation for it. It starts a hair rough (manga, might be fixed in the anime, many such cases) and I think too episodic but it quickly hits a very good stride, I think slightly more lighthearted than Bambu's usual fare but it's respectably dark when it needs to be. Main cast is extremely likeable as are the side characters (My only [small] issue with the series is that an addition to the main cast about halfway through is one of my least favorite characters and even then she's not bad). Haven't gotten to the ending yet but I can't imagine they'd **** it up.

I'd suggest Looking Up to Magical Girls/Gushing Over Magical Girls, but I think you'd hate the MC more than I do.

Mob Psycho 100 if no one suggested it before. It has good action, good characters and a good plot. No weird fan service that might be a turn off for people with more normie-like tastes. It's about a kid with telekinesis that fights other people with telekinesis and tries to have a nice normal school life.
Genres: Modern fantasy, Psychics, Battle shonen, Action, Slice of life, School life

Konosuba is really good if you can tolerate blue humor aimed towards teenage boys, it's 75% of the show. It has funny characters, funny plot and funny everything. It's about a bunch of losers failing at life and getting into comedic situations. Sometimes they even get some wins.
Genres: Medieval fantasy, Comedy, Adventure, Slice of life

Goblin slayer is a really good grimdark fantasy story if you can stomach the first episode and watch afterwards. It has strong content but it has cool characters, cool semi-grounded fight scenes and a good plot.
Goblin slayer is about Goblin slayer, a knight that hunts and kills goblins alongside his party. Pretty DnD inspired.
Genres: Medieval fantasy, Battle shonen, Grimdark

Steins; Gate is a really good anime, it doesn't have fan service that might turn off normies. The characters are good, the story is good, the plot is good, it is a really good anime.
It's about a guy who discovered a time travelling machine. He is hunted by the government and has to loop time multiple times in order to save his friends who consistently die.
Genres: Modern fantasy, time travel, drama, suspense, mystery

I could suggest more but I'd have to dig down on my 200+ anime list because I watch a lot of forgettable anime
