She has such skill, she can basically cause body parts to lose their function ie when she destroyed Wilhelm leg, passing through his muscles and nerves, so he couldn't move.

It would certainly be possible to put Akaza into a state where he can't move if he is prevented from regenerating. I'm not sure if the same method she used on Wilhelm to make him unable to move would work on demons though since demons have shown the ability to move or even speak when they logically shouldn't be able to do that with the body parts they have currently available like for example Susamaru after her head was crushed by Muzan and Enmu who was dying and reduced to a pile of flesh. There is even how that woman who got an overdose of Muzan's blood managed to form an arm out of her melted remains for a short moment. This is just something that came to my mind right now but I guess this means Theresia would need to immobilize Akaza the hard way by thoroughly cutting him up.
