Except there are multiple panels that have shown hundreds of stars minimum. Gremmy's Galaxy Room (which has to exist within the worlds created by PSK) and Tousen's flashback with his friend before joining the Gotei. The novel just gives us a quote of countless stars which is easier to place in the justification.
