After going through a few videos, including this one, it seems to be a fairly consistent trend that fully-trained (Knight or higher) Jedi require either several shots or one direct shot to the heart or head from a blaster to be confirmed dead, and their bodies almost always remain entirely intact minus the entry/exit wound of the blaster shot. So, I think Jedi in Disney canon and quite likely in Legends should have Small Building level durability without Force augmentation/shielding
