They don't have normal human durability Oda just likes making bladed/piercing weapons damaging lol.
Hence why he harps so much on certain characters who have special skin or abnormal toughness to block such attacks (Franky's metal body, Sanji's Exoskeleton, Kaido's scales, etc)
