Yea but I thought Haku only fights with senbon needles and katara's Hypersonic reactions are enough to defend against them and can't she just bend his mirrors and break them

Katara can indeed bend the mirrors but once she does it ,haku will engage in hand to hand combat and he is probably going to win because katara is Hypersonic only in reactions and probably peak human in combat speed while haku has at least faster than eye combat speed.So even though she can follow his moves she isn't fast enough to defend herself in such close proximity
