OK, now Thanos actually has a chance but I still think the sheer gap in skill more than gives Grievous the win. Plus he's pretty agile so he can dodge pretty well. Also, he can use his feet to grab at Thanos and possibly take the Infinity Gauntlet off of him.

Also, Grievous is able to stealth past Force Sensitives so if he tries that against Thanos there would be no stopping whatever he tries to do from there.

Literally any attack that Thanos connects will one-shot, and Grievous has no way harming of him barring making some useless chip damage, let alone that Thanos has the space which allow him to create shields.

Grievous is also not stealing the IG considering his inferior lifting strenght. Skill alone by no means enough to defeat someone with far higher AP and Dura.

Stomp.

Thanos is 5-A with the power stone, legends Grievous is 5-B, so it's up to skill, assume that grievous lightsabers won't cut through Thanos' sword.

I'm 90% sure that Grievous has a massive advantage in Skill. Plus stealth that works on Jedi who have absurd senses.
