The same as always. Although 2.0 story has changed a lot from the original one so at this point I'm just waiting for something that contradicts the mainline.

In interview with PoC's director, we learned that it is a continuation of DMC IP which according to Itsuno is canon.
That and more things we got from that interview that states it is pure original and stuff like that. So having the question of non-canon is quite non-existent to me

Nah, we don't know what demons are the ones she canonically fights. Couple that with the fact that she throws hands with a Bianco in DMC 4 and barely wins.
Phantoms aren't equal to the Demonic Army General Phantom nor are the Minotaurs equal to the one that fought Pluto

Would the missions she has cutscenes and dialogue that are referenced to her solely and not Dante be the ones we can suggest she has canonical fights in?
I mentioned the chapters before and there are a few others like the Minotaur and Ice Phantom ones you mentioned.

Chapter 9 has statements throughout the level that she's fighting the demons in that chapter as a favour for Lily in finding the artifact.
Chapter 12 gives us an intro that Lily and Lady are going through the level.
Before fighting Nevan in chapter 12, she gets dialogue from Lily that she'll be fighting a strong demon ahead, which is Nevan, along with the supported scans below, would that suffice?

There are some statements here and there. Some that might be from 1.0 but I need to access the chinese version to get the raws and compare.
There isn't anything good tho, also the story mode is just 1.0 story mode but cut and shortened to hell so it is pretty confusing on its own.

So the stuff I think we may get from the global that was in 1.0:
I should note that I got some interesting tip screens (that I never got again) like telling me players that get hit have a skill issue
- banshee ressurrection and type 8 shit (she does the animation after "dying" once but not any description of this in the english version tho)
- pluto fate hax (his moveset description mentions something very similar to the 1.0 version, need raws to check tho)
- cerberus soul freezing hax (already confirmed ig)
- Faye demonic form description in english doesn't have the void stuff
- soul fuckery (every enemy descriptions mentions ******* with the soul one way or another)
- demon arms needed to fight demons (kinda? some hunters mention DA are amazing to counter demons when talked to in the bar)
- plutone at least has a cemented purpose (which is killing everyone/enslaving everyone AND turning the human world into another demon world)
- weapons "lore" (which is more like 'it killed and absorbed countless souls and now is more powerful!')
