So in endgame Thor is dual welding, the recent scaling for Captain America with the Hammer mjolnir, puts him in an tier 6-B, so shouldn't 'fat Thor' have potentially 6-A on his profile. Especially since stormbreaker is calculated to be really powerful via its full infinity gauntlet feat.

Perhaps note it down as energy potential?

No. We don't assume a random higher tier when we don't know exactly how powerful that would really make him. In that case we only mention that the character is higher. For example, Thor already has "higher with Stormbreaker and Mjolnir".
