Captain Phasma vs Jango Fett

Jango Fett takes this. He has the superior selection of equipment, including High 8-C heavy weapons that Phasma doesn't seem to have a counter to, plus a fibercord rope capable of restraining the likes of Chewbacca. Fett also has better armor and a jetpack that can allow him to keep out of Phasma's melee range, countering her striking strength advantage. Jango was considered to be one of the most dangerous bounty hunters and warriors in the galaxy, and for good reason. As dangerously efficient as Phasma is, I can't see her winning this.

I'm removing the High 8-C explosives

This is a closer fight without the explosives, but my vote still goes to Fett for the other reasons I mentioned.

Phasma would put up a better fight against Jango than Finn. But she still loses in the end. Jango, like Boba, has the skills and tactical acumen to take down physically stronger opponents. Even the likes of Black Krrsanta, who should be much stronger than Phasma, would likely not beat Jango.
My thoughts on how this goes: Jango engages Phasma at mid-range and probes her with a few shots from his blaster pistols (but without using the highest setting). As he realizes how strong her armour is and that she's stronger physically, he's likely to keep himself at a distance via grappling cables and jetpack. Phasma is explicitly stated and shown to be superhumanly agile. But Jango can deal with even more agile opponents (such as Wookies and Jedi). He'll likely trap her with a cable and then either blast her with a flamethrower or shock her. Follow up with an overcharge shot from one of his blaster pistols right through her visors or into the neck and it'll be over.
