I don't know if some people noticed the full explanation. But gojo infinity works based on his perception. He chooses whatever he wants inside of his infinity by mass and other things.

Pretty much perception blitz should work unless i am missing something.

For example he needs air to breathe so he lets it in. But he chooses other things out. He himself stated he can't short out poisonous things.

He even explained how his infinity works. It's calculate mass and velocity of objects (Physical objects) and Cursed energy
