Shido never used Aleph to fight so he never used time acceleration. even if he want to, he need to bring a gun and shot himself with it
Shido can indeed use many angels at the same time but those who are effective in this case (mostly Michael's sealing) he need to summon the angel first (do not take much time but enough for Ren to Infinite blitz GG)
and For shido, he need time to use all of them at the same time, enough time for Mio to just said "it's useless" to nopê all of his attacks
