Well, iC Ed isn't the man who directly transmutate someone.. And he need to touch illya to do that.
Furthermore, Illya can still beat Ed with Degen if he can't defend with Alchemy on time. Illya can also break of of Ed's arms to stop him to use further Alchemy too. (Which she can realize after see Ed do it a few times.)
