In this profile here, it states that Ghost Rider is Mountain level for "destroying a Himalayan mountain".
Looking at the page here , I am not sure if the entire mountain has been destroyed, or just the top of it.
It looks like only the top of the mountain has been blown up...

Why does his regen is rated as High because he regenerated from being liquidized? that would be more like Low High.
This seems like a good match-up, both characters need a little bit of attention.

I'm not sure if this has been discussed before, maybe it has but the Ghost Rider on the Wiki, his stats are from a Johnny Controlled Ghost Rider. The Handbook Iirc doesn't account for Zarathos taking control and as stated by Strange, the Host acts a safety net and Caps the SoV's power.
