Why do people make fictional characters fight even if it's out of character? does this not matter?

I'm confused, why does making fictional characters fight that's out of character?
Examples: Like, Pacifist Frisk from Undertale Pacifist Frisk always spares her/his opponent rather than fight them. (However, people still make her/him fight) Or making Mario and Luigi (the star children) fight wouldn't making them fight be out of character? (However, people like Animation Rewind made her/him fight each other) do we just ignore this and why?

Oh my bad, I'll rememeber that. I'll post on the VS Battle Wiki section from now on thank you for telling me.
 
We ignore it because we want to see them fight.

But we also don't ignore it, unless bloodlusted, the characters will act in character for the most part, meaning Batman will try to incap instead of kill, even if killing would let him win, or Frisk as you mentioned will try to defeat his foes without killing or maiming.
