It's worth a rewatch in the japanese version since that version is specifically uncensored and has Live and Learn but yeah I think for those reasons you said are the perfect reasoning for why it could use a remake with modern animation

Digimon already got a reboot as well as spin off series as well as other things.
In my opinion, the best ones was the original first season.
