We don't really know the capabilities of ultimate. That's why I didn't iclude it. But the question then is that couldn't Mael also use ultimate?

We know the the capabilities of ultimate, he's stronger than the Demon King Physically and above the likes of Ban and King and Mael admited he feats the Demon King.

Mael could use it in a theory but since he didn't he would be weaker than Escanor in that form. Which bring the question, Why did you make this match tbh?

We already knows that Mael is suprior to Escanor due to having an angle body and more experince with the grace, if you won't even give Escanor his Ultimate form then this match is really pointless.

escanor wins 3 pretty easily if he uses the ultimate one.

Mael wins the first two, his base level is already way above Escanor, add Sunshine to the ecuation and he remains stronger. Escanor only wins the last one due to his Ultimate Form.
