Would it take minutes on a guy that Thanos is directly trying to kill due to SBA? Thor threw his axe into his chest but Thanos didn't erase him with the snap. With SBA, he might snap half the universe, but also make sure that Orange specifically is part of the 50% that get erased

thanos can definitely control who the snap kills (tony's snap specifically dusted thanos and his allies), but it doesn't kill instantly, and thanos doesn't seem to have any control over that. in the film, many of thanos's victims don't disappear until minutes after the snap. the quickest snap victim we see is this leviathan, which dies about 5 seconds after tony snaps his fingers. even if thanos gets really lucky and orange disappears in 5 seconds, that's still enough time for orange to knife him if he acts fast. that's not to say thanos has no chance at winning this - knife doesn't always immediately kill its victims either - but it is much faster and more reliable than the snap.

Btw, Orange's profile is extremely poor regarding his stats (AP, speed, LS and dura) since there isn't any single calc that justifies them, and others are directly incorrect like his 5-C rating since the Moon was destroyed after multiple attacks

orange previously scaled to a real world calc, but it got downgraded so he now needs calcs. i cant do them right now though

shattering the moon took multiple attacks, but actually blowing it apart (thus overcoming its gravitational binding energy, which is what "moon level" actually means) happened in one attack
