Link is 1 KiloFoe, Doomsday is 616 KiloFoe.

So, Doomsday is leading with that high AP gap, that's not good for green boy in the left corner. Most of Link's resistance won't matter to Doomsday except for countering Doomsday's fire or energy attacks. Even with Intangibility, Doomsday can still hit him.
I don't know if Link's Attack Reflection works on physical attacks, whether it is for magic attack.
Doomsday can eventually adapts to Link's sword and be highly resistant to it. And there is no internal organs for Link to hit and hampers Doomsday. How will Link get past Low-High Regenration. And the fact that Doomsday can get stronger and stronger... I don't see how Link could win
