Hum nobody said the Watcher could control fate, it's just that he clearly says he had seen everything that was supposed to happen and Ultron being able to see him and interact with him wasn't supposed to be possible

The Watcher is not stated to control fate on that profile. Ultron's resistance to fate manip is because the watcher can see everything that can ever happened, yet he deems Ultron being able to be aware of him as impossible.

So when he arrives to face them for the first time, Infinity Ultron destroys the mountain the "Multiversal Avengers (gonna call them that way for now) were stranding. Could be earth manip since he cracks the ground and the mountain with a look or deconstruction

Strange Supreme just attacked Ultron with some of the dragons wihtin him. Animal Manipulation people. And Ultron gets resistance to fire since he tanks the attacks of THREE dragons without much problems. And also energy absorption apparently since when Zombie Wanda appears and blasts him with her Magic, he drains it I think.
