We didn't. You wanna use Pre-Dio's The World Jotaro ? Just ignore the pissed off stats and time stop, everything else is roughly the same.
Though Jotaro isn't exactly impossible to get mad so that still applies prior to the end of Part 3, it's just, extremely unlikely he'd ever get that mad normally, but it's a thing he always had access to.
