While Jon Snow should be slightly stronger in AP (I think he scales to this), it doesn't seem like he can hold his ground against Riptor.
I know nothing on Jon, but looking at his file, he seems to be a very skilled human, but doesn't seem to have counters against Riptor's fire attacks, plasma/disease claws, superior LS, unorthodox fighting style (at least, Jon's file doesn't list him fighting anything other than humanoids), hypnosis, higher stamina, stats amp and else.

On the other hand Riptor is already quite skilled and experienced on her own, and is pretty much used to face swordfighters, given how many there are in the KI universe, and considering she's fought basically clones of all of them.

Well, you can check this blog but in summary Jon's skill would be the following:

Kingsguard (Elite group of knights who are some of the greatest and most skilled warriors in all the continent) < Sandor Clegane (Easily killed four members of the Kingsguard in a row) < Adult Jaime Lannister (Implied to be most skilled than Brienne of Tarth, who is comparable to Sandor Clegane) < Gerold Hightower (Stated to be a legend, and that the current members of the Kingsguard, including Jaime Lannister and Sandor Clegane, are mud soiling his name) < Young Eddard Stark (Killed Gerold Hightower with just two moves in single combat) < Jon Snow (Stated to be the greatest swordsman who ever walked by the Northmen)

• ‌An example of the skill difference between knights like Gerold Hightower and the current members of the Kingsguard is when Barristan Selmy, who was in his 60-70s and weaker than his prime, stated that he could kill five members of the Kingsguard like carving a cake.

His first key scales to that value, in his second key he is considerably stronger than before since he's equal to someone who had easily overpowered him previously

Unfortunately for Jon this is true, Riptor has many abilities on her side plus her far higher LS, the only advantages I see for Jon are his skill and AP

Yeah, the problem with Jon is that he doesn't have any abilities besides being very skilled since he's just a normal human. I should have picked a White Walker

Yes, it's also questionable how much Jon's skill is useful here, since from what I see he's never faced such kind of opponent, thus the situation should be similar to an irl human not knowing how to deal with an animal, despite being skilled in a determined form of combat.
