Luffy not ONCE bounced a sword off him or even attempted to until post timeskip vs cracker where he created a specific form to absorb PIERCING specifically and amped it up with Gear 4 levels of haki on that single point of impact.
Pre-TS Luffy dodges even fodder swords.
It's even a specific point beginning of TS that Luffy makes that he still isn't strong against certain piercing attacks even with haki. And his instinct is more than enough a reason to avoid obvious threats (like with Enel's trident, Croc's claw even before knowing about the poison, Kuro's claws, etc)
He's not gonna stand there and let Sam shred
