Soul hax, Life hax, Death hax/Dura neg, Absorption with Homies.

Soul hax/Life Hax and Death hax only work against people who are afraid of her, Which Saitama wouldn't be.
Homies can only absorb their respective elements. So their non factors here.

Saitama has never been shown to fear death, and considering he's like, massively stronger than her. there no reason to assume she would instill that fear into him.
When has big mom ever shown that she could soul crush someone? especially someone who wasn't afraid of death, which is already established as a way to stop her soul manip from working?

Her profile probably says that because of Zeus, I don't think that she can do this to Saitama, because Zeus has her own soul.

The only way to victory I see possible for Mama here would be to turn Saitama's shockwaves into homies and use it against him.
Since her Haki would warn of Saitama's power level and his naivete towards her powers might make that idea possible (Mainly because by precog, hit her with physical blows would be a pain in the ass). But I don't think Linlin could beat him; at some unavoidable moment, she will get hit by a physical blow (Since even Katakuri - who has a superior kenbun - was hit by accident in a moment of sloppiness) and be destroyed into pieces. Saitama takes this.
