Akumo is going to open by attacking Iron Man with one of his martial arts, which he could change depending on how Iron Man reacts to him.

Another factor is that Akumo's power, speed, technique, and prowess will continue to grow the longer this fight goes on thanks to Reactive Evolution.

Honestly think this is inconclusive.

Iron Man has much better flight than Akumo's pseudo flight, but doesn't really have anything to get past Akumo's regeneration. Both have there own means of getting stronger over time. Akumo absolutely would win in close quarters, but Tony is smart enough to keep his distance and spam attacks from outside Akumo's attack range.

If Akumo uses Water Stream Rock Smashing Fist and reflects those attacks back to Iron Man (which makes said reflected attacks stronger), Akumo can still potentially win if he correctly aims those reflections back at Iron Man. Eventually (sooner rather then later) Akumo will predict his dodge patterns and hit him with his own blasts amplified by Akumos own force

That's a good strategy, but iron man 35's chances of dodging are still decent. Could Akumo make countered attacks bend or be homing at least a bit?

He can bend them to perfectly attack where his enemy is/will be, but he can’t exactly make them ‘homing’. But when it comes to just aiming the attacks, he’s more than capable of sending them to exactly where his opponent is about to dodge towards, especially after seeing them used over and over again

Well, this combined with his crazy Reactive Evolution makes it an hours-lasting "western shootout", which will Akumo likely win in the end. What would Akumo do, when iron man's rockets and ammo went out and he just floated around him? Or if he stopped launching them cuz it doesn't do anything?

Akumo will find a way to hit him, in time. Iron man can’t avoid Akumo forever, and Akumo’s insane stamina and force determination should let him fight for as long as it takes to win in the end. Akumo may just decide to wait for him to attack instead, since Akumo knows he has the martial arts advantage to beat iron man down hand to hand. If iron man wants to win, he’s going to have to do something very creative, and hope Akumo doesn’t get back up again
