Nothing really, but it is contact based, no? iirc, Kaneki has some AP advantage and Kaneki can just create more Kagunes, so, freezing them isnt really a problem, he can just create more

Also, another thing, Dio can mind control and turn him into a minion as well if he somehow gets his essence into him, and Ken doesn't have any resistances to either.
And now one might say "that's out of character", surprisingly, it isn't, at least for Part 1 Dio.

Part 1 Dio is all for making minions and using hypnosis, (that was his goal in Part 1, turn the whole ******* world into his minions, he turned hundreds within the Part alone and he barely got going) he used it on Jack and made him a minion because he was worth it, he used it on Poco as a trap, he wanted to do it on Jonathan but failed (It's actually why he didn't freeze Jonathan fully, he wouldn't be able to insert his essence if he did, and he really wanted Jonathan as a minion, which allowed Jonathan to stall long enough to melt the casing because they were in a stand off where neither could do much).
And as for hypnosis, that's just eye contact based, and Dio used it twice, maybe thrice so eh, he's willing as long as he sees it fit, it'd also work to incap Ken and pacify him so he can follow up like he did with Jack who was being a tad roudy 🤷‍♂️

Never said he couldn't, but it'd bisect him or lop off his tendrils long enough for Dio to touch him literally once. Doesn't need to be permanent, just long enough to follow up or create an opening.

That's not an issue kaneki can simply make a lot more of those near instantly but yeah he can't do anything against mind hax
 
While not Part 1, flesh buds can get past Multiple Selves, at least to an extent, up to two selves at least, though that's Shadow DIO (Which actually doesn't change much, Part 1 Dio has everything Shadow DIO has bar The World, except better even. Main issue would be if it's OOC for Part 1, not if he can do it).

Kaneki's profile doesn't have multiple selves on it. so it's not applicable here anyway
 
It actually doesn't effect anything, only Dio's hypnosis would be effected and it isn't even why he's winning here
